So we got skunked again Moose hunting this year. I got home Saturday night and decided to go out for the first time this year for a deer on Sunday afternoon. Heres my shitty to good storey for you to read ;)

I get out to where my 2 stands are, and WTF, they are building a building in the field not 30 yards from my field stand, so thats strick one against me for the day. Then I go 30 yards into the heavy bush to use my other stand and I climb up there and one of the steel support cables has ruted and broke, thats strike 2 now. I was able to fix it with some rope I had so I didnt have to quit the hunt for the day and away I went, stting waiting, listeneing and WTF some guy at 4pm on a friggin Sunday of all days shows up on the job site to start moving gravel around with the heavy machinery. Thats strike 3 against me now BTW. This guy is there until 5pm, I am getting pissed because hes only like 75 yards away making all kinds of noise. Then it gets better, I see a buck walking through some rough area at 10 to 5 even though this guy is making all kinds of noise. He gets to pretty much the only place I can make the shot with the direction he was walking so I take it......did I get him..... lets go see, he ran like a mother f'er though. I climb down and sure a shit, my luck continues to be shitty, the arrow deflected off a small branch right before the SOB and stuck into a log right in front of where the deer had been standing. So whats that now, strick 4 right. Well its not dark yet so I get back into the stand and wait a little bit more, pretty much knowing that I will be moving these stands next weekend and trying to find somewhere else to hunt due to the construction. So basically, for this year, its do it tonight or forget about it till next year. About 40 minutes rolls but and WOW, here comes another buck right in a perfect shooting lane, but as soon as he gets into the lane, he is facing me, walking right towards me not giving me a single broad side shot. Right about 5 yards from my stand he turns and gives me the shot, so I take it and here it go off and the deer runs about 7 yards to the other side of my stand and just stands there for a minute. I am thinking that he was soooo close that using the cross hairs put the arrow over top of him and I'm pretty much ready to throw the bow out of the tree now. Then he slowly just walks away and stops about 30 yards away behind some heavy cover. I tried to call him back but he wasnt in sight any more and I waiterd about 10 more minutes and called it a day. When I get down and find my arrow stuck in the ground, sure as shit its covered with blood all the way around. My luck just got better...woooo friggin hooo!!! So I call a couple people until I find a buddy that lives pretty close that can bring ma a flashlight (I forgot mine at home) and help me track it if he went very far. Turns out that he dropped 30 yards from the stand.

He's got a really small rack, but he is probably 200+ pounds.

My nieghbour just helped me and a buddy move it from his garage to mine since I didnt have anything to hang it from last night. The nieghbour says hes probably closer to 250 pounds. I should have lots of meat from this fella....still wont last long, I eat it almost every day when I get one LOL.

i tried but haven't got mine yet. i'm waiting for a big buck. its muzzleloader season here, but i haven't seen much.

The body on that sucker is about the same size as the 8 pointer I got last year! gotta love those farm country deer.

eh? man i did not think for one minute that some florida buck genes would be in the wood pile up in canada, that rack looks typical for around here lol

I'm goin to have to give you my jerky recipe I see. Nice buck! I've taken 4 this season. My only buck was a 5 pointer and dressed at 105 lbs. We need some canadian genes down here! Congrats to you RD!

Well lay that recipe on me brother, I make about 10 pounds of that stuff a year (beef though). Well it starts out at 10 pounds but ends up being about a pound LOL.

LOL, its only a little rack, its a (or was a ) big deer. It filled a chest freezer, or damn near filled it.

I use ground venison but you can use cut meat too. The primary spices used are Eastman Outdoors Jerky Seasoning (available in the US at Wal-mart) and then I add to it.
5 pounds ground venison
1 ounce cure
1 ounce Teriyaki seasoning (or original or whiskey pepper etc.)
1/2 to 1 ounce crushed red peppers depending on how much bite you want
1/3 cup worcestershire sauce
2/3 cup teriyaki sauce
1/8 cup liquid smoke
1/8 cup black pepper
1 cup ice water

combine all seasonings with ice water and mix thoroughly
pour over meat (in large mixing bowl)
I wear surgical gloves and do this by hand (the red pepper WILL burn without the gloves plus if the meat was just thawed out it will be cold as he!!)

Refrigerate overnite to allow the seasonings to soak in good
I use a jerky gun from cabella's (like a big grease gun) to squirt the meat out on to dehydrator trays. My dehydrator has 4 trays and all 5 pounds will fit if you start in the center of the tray and make 1 big coil covering the whole tray.

Set dehydrator to 160 or the max setting and run about 6 hours. I periodically rotate the trays (put the top 1 on the bottom and so on) about every 1 and 1/2 hours. I don't dry the meat out all the way. I like it a little moist. This will make the best snack you've ever had!! Experiment with the quantities and type of seasoning for your preferences. DON'T let your friends try it or they'll pester you to death to make more! Please keep this recipe secret cause it took me years to develop it.:biggrin1:
